Very moist and Tasty
Ingredients
  • 4 eggs
  • 1¾ cups brown sugar
  • 1 tsp vanilla
  • ¾ cup butter or margarine, melted
  • 378 ml unsweetened applesauce
  • 2 tsp potato flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 Tbsp soy flour
  • ¾ cup rice flour
  • ¼ cup corn flour
  • 1 cup potato starch
  • 2 cups raisins
Instructions
  1. In a large bowl, beat eggs and sugar together for 5 minutes. Add vanilla, margarine, and applesauce; beat well.
  2. Slowly beat in dry ingredients in order given, beating well after each
  3. addition. Mix raisins with part of potato starch before stirring into
  4. batter.
  5. Pour into 2 greased/paper lined muffin tins and bake at 375°F for 20-25 minutes.
Notes
Carrot Muffins: Substitute 2 cups cooked and mashed carrots for the applesauce. Increase brown sugar to 2 cups. Pumpkin Muffins: Substitute 398 ml canned pumpkin for the applesauce. Increase brown sugar to 2 cups.
