Ingredients
  

  • 4 eggs
  • 1 3/4 cups brown sugar
  • 1 tsp vanilla
  • 3/4 cup butter or margarine melted
  • 378 ml unsweetened applesauce
  • 2 tsp potato flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 Tbsp soy flour
  • 3/4 cup rice flour
  • 1/4 cup corn flour
  • 1 cup potato starch
  • 2 cups raisins

Instructions
 

  • In a large bowl, beat eggs and sugar together for 5 minutes. Add vanilla, margarine, and applesauce; beat well.
  • Slowly beat in dry ingredients in order given, beating well after each
  • addition. Mix raisins with part of potato starch before stirring into
  • batter.
  • Pour into 2 greased/paper lined muffin tins and bake at 375°F for 20-25 minutes.

Notes

Carrot Muffins: Substitute 2 cups cooked and mashed carrots for the applesauce. Increase brown sugar to 2 cups.
Pumpkin Muffins: Substitute 398 ml canned pumpkin for the
applesauce. Increase brown sugar to 2 cups.
