Applesauce Muffins
Very moist and Tasty
Ingredients
- 4 eggs
- 1 3/4 cups brown sugar
- 1 tsp vanilla
- 3/4 cup butter or margarine melted
- 378 ml unsweetened applesauce
- 2 tsp potato flour
- 1 tsp salt
- 1 tsp vanilla
- 2 tsp baking powder
- 2 tsp baking soda
- 1 Tbsp soy flour
- 3/4 cup rice flour
- 1/4 cup corn flour
- 1 cup potato starch
- 2 cups raisins
Instructions
- In a large bowl, beat eggs and sugar together for 5 minutes. Add vanilla, margarine, and applesauce; beat well.
- Slowly beat in dry ingredients in order given, beating well after each
- addition. Mix raisins with part of potato starch before stirring into
- batter.
- Pour into 2 greased/paper lined muffin tins and bake at 375°F for 20-25 minutes.
Notes
Carrot Muffins: Substitute 2 cups cooked and mashed carrots for the applesauce. Increase brown sugar to 2 cups.
Pumpkin Muffins: Substitute 398 ml canned pumpkin for the
applesauce. Increase brown sugar to 2 cups.
