A quick and easy bread alternative.
Ingredients
DRY INGREDIENTS
  • 1 cup amaranth flour
  • 1½ cup brown rice flour
  • 1 Tbsp baking powder
  • 1 tsp salt
WET INGREDIENTS
  • 1 cup water, milk or milk alternative
  • 3 Tbsp honey
  • 2 Tbsp vegetable oil
  • 2 egg whites, beaten
Instructions
  1. Mix dry and liquid ingredients separately; beat egg whites, then combine all ingredients.
  2. Pour batter into well-oiled loaf pan and bake at 350F for about 45 minutes.
  3. Cool 10 minutes before removing loaf to rack.
