Sweet & Sour Pork
A sweet and tangy sauce loaded with tender pork and veggies.
Ingredients
- 1 1/2 lbs boneless pork loin
- 1 Tbsp oil
- 1 cup water
- 1/4 cup white vinegar
- 2 cloves garlic minced
- 1 Tbsp fresh ginger root grated
- 1 Tbsp GF soy sauce
- 1/4 cup brown sugar
- 1/2 tsp salt
- 2 Tbsp cornstarch + 2 Tbsp water
- 1 cup pineapple chunks
- 1/2 cup onion thinly sliced
- 1 green pepper thinly sliced
- 1 red pepper thinly sliced
- 1 carrot finely grated
- 2 cups hot cooked rice
Instructions
- Cut pork slices into strips about 3 inches long and 1/2 to 1 inch wide. Sauté pork strips in hot oil over medium heat until lightly browned; drain.
- Mix water, vinegar, garlic, ginger, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 20-30 minutes, or until meat is cooked and tender.
- In a cup, mix cornstarch and water, then add to pork. Cook over low heat, stirring constantly, until mixture is thickened and bubbly.
- Add pineapple chunks, onion, green/red peppers and carrot, then cover and simmer for 10 minutes longer, or until vegetables are tender. Serve over rice.
