A sweet and tangy sauce loaded with tender pork and veggies.
  • 1½ lbs boneless pork loin
  • 1 Tbsp oil
  • 1 cup water
  • ¼ cup white vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp fresh ginger root, grated
  • 1 Tbsp GF soy sauce
  • ¼ cup brown sugar
  • ½ tsp salt
  • 2 Tbsp cornstarch + 2 Tbsp water
  • 1 cup pineapple chunks
  • ½ cup onion, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 carrot, finely grated
  • 2 cups hot cooked rice
  1. Cut pork slices into strips about 3 inches long and ½ to 1 inch wide. Sauté pork strips in hot oil over medium heat until lightly browned; drain.
  2. Mix water, vinegar, garlic, ginger, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 20-30 minutes, or until meat is cooked and tender.
  3. In a cup, mix cornstarch and water, then add to pork. Cook over low heat, stirring constantly, until mixture is thickened and bubbly.
  4. Add pineapple chunks, onion, green/red peppers and carrot, then cover and simmer for 10 minutes longer, or until vegetables are tender. Serve over rice.
