Sweet & Sour Pork

Ingredients
  

  • 1 1/2 lbs boneless pork loin
  • 1 Tbsp oil
  • 1 cup water
  • 1/4 cup white vinegar
  • 2 cloves garlic minced
  • 1 Tbsp fresh ginger root grated
  • 1 Tbsp GF soy sauce
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 2 Tbsp cornstarch + 2 Tbsp water
  • 1 cup pineapple chunks
  • 1/2 cup onion thinly sliced
  • 1 green pepper thinly sliced
  • 1 red pepper thinly sliced
  • 1 carrot finely grated
  • 2 cups hot cooked rice

Instructions
 

  • Cut pork slices into strips about 3 inches long and 1/2 to 1 inch wide. Sauté pork strips in hot oil over medium heat until lightly browned; drain.
  • Mix water, vinegar, garlic, ginger, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 20-30 minutes, or until meat is cooked and tender.
  • In a cup, mix cornstarch and water, then add to pork. Cook over low heat, stirring constantly, until mixture is thickened and bubbly.
  • Add pineapple chunks, onion, green/red peppers and carrot, then cover and simmer for 10 minutes longer, or until vegetables are tender. Serve over rice.
