Rub this over the meat for a juicy and savory pork chop.

- ¼ cup cumin seeds
- 3 Tbsp whole black peppercorns
- 1 Tbsp coriander seeds
- 2 Tbsp brown sugar
- 1½ tsp sea salt
- Combine first 3 ingredients in a heavy medium skillet, and stir over medium heat until fragrant and toasted, about 8 minutes. Cool slightly, then finely grind in a blender or spice grinder.
- Transfer to a small bowl, and stir in sugar and salt (makes ½ cup).
- To Prepare Pork Chops: Rub each pork chop (both sides) with about ½-1 tsp of the spice rub mixture, then sear with oil in hot fry pan. After about 2 minutes, flip and sear other side. The turn down heat, cover and finish cooking (about 5-10 minutes, depending on thickness).
