Great for dipping in hot cup of tea - or a tall glass of cold milk.
Ingredients
  • 4 eggs
  • ½ cup sugar
  • ¼ tsp salt
  • ⅔ cup oil
  • 1¼ cups potato starch
  • 2½ tsp lemon zest , divided
Topping:
  • Cinnamon sugar (4 Tbsp sugar + 1 tsp cinnamon)
Instructions
  1. Using a mixer, beat the sugar and eggs for 2-3 minutes. Add salt, oil, starch and 1½ tsp zest, blend well until a smooth cookie dough forms.
  2. In a small dish, add cinnamon sugar and 1 tsp zest. Form dough into the shape of small balls, roll in sugar mixture, then place on a lightly greased cookie sheet and bake at 350°F for 10-15 minutes.
