Sugar-Crusted Lemon Crisps

Ingredients
  

  • 4 eggs
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2/3 cup oil
  • 1 1/4 cups potato starch
  • 2 1/2 tsp lemon zest divided

Topping:

  • Cinnamon sugar 4 Tbsp sugar + 1 tsp cinnamon

Instructions
 

  • Using a mixer, beat the sugar and eggs for 2-3 minutes. Add salt, oil, starch and 1 1/2 tsp zest, blend well until a smooth cookie dough forms.
  • In a small dish, add cinnamon sugar and 1 tsp zest. Form dough into the shape of small balls, roll in sugar mixture, then place on a lightly greased cookie sheet and bake at 350°F for 10-15 minutes.
