Great for dipping in hot cup of tea - or a tall glass of cold milk.
- 4 eggs
- ½ cup sugar
- ¼ tsp salt
- ⅔ cup oil
- 1¼ cups potato starch
- 2½ tsp lemon zest , divided
- Cinnamon sugar (4 Tbsp sugar + 1 tsp cinnamon)
- Using a mixer, beat the sugar and eggs for 2-3 minutes. Add salt, oil, starch and 1½ tsp zest, blend well until a smooth cookie dough forms.
- In a small dish, add cinnamon sugar and 1 tsp zest. Form dough into the shape of small balls, roll in sugar mixture, then place on a lightly greased cookie sheet and bake at 350°F for 10-15 minutes.
