Pecan Meringue Cookies
Sweet, light clouds of pecan fluffiness.
Ingredients
- 1 cup whole pecans toasted, chopped
- 3 egg whites
- Pinch salt
- 1 cup sugar
- 1 tsp vinegar
Instructions
- Preheat oven to 300°F.
- Beat egg whites and salt until soft peaks form. Then gradually add in sugar and vinegar until stiff peaks form. Then gently fold in the pecan pieces.
- Drop by teaspoons onto a parchment lined baking sheet, and place in oven. Immediately turn off oven and leave them in the oven overnight.
