Strawberry Cream Cupcakes
Moist white cupcakes are filled with a strawberry infused cream cheese filling, then baked until perfection. To complete the decadence, light and fluffy whipped cream is flavored with Cointreau (orange flavored liqueur) and white chocolate to top these off!

Strawberry Cream Cupcakes
Ingredients
Cake
Filling
- 8 oz GF cream cheese softened
- 1 egg
- 1/3 cup sugar
- 1 oz GF white chocolate grated
- 3 Tbsp macerated strawberries*
Topping
- 1 cup whipping cream
- 1/3 cup sugar
- 2 tsp Cointreau or Grand Marnier optional
- 1 oz GF white chocolate grated
- 2 Tbsp - 1/4 cup macerated strawberries* to taste
Instructions
- Prepare filling by beating together the cream cheese and egg. Add the sugar and white chocolate, mixing until smooth, then stir in the the strawberries.
- Follow directions in the White Cake recipe, then spoon batter into lined muffins tins 2/3 full.
- Spoon about 1 Tbsp of filling into center of each muffins batter, gently pressing it down in a bit.
- Bake at 350°F for 30-40 minutes, or until done.
- For topping, whip cream while slowly adding in sugar. Once whipped, stir in remaining ingredients. Then frost over cooled cupcakes.

WHAT IS GRANDE MARNIER OR COINTREAU
How can a white cake be gluten free? I am confused after reading this recipe. Am I missing something about the white cake recipe?

Thank you for that recipe but I can’t use any form of alcohlic so what else can I use
You can omit it completely if you like (you don’t need to replace it with anything), it tastes great with or without it!
