This white cake will melt in your mouth.
  • 1 cup whipping cream
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 ½ cups sweet rice flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs, lightly beaten
  1. Whip cream until still, while slowly adding sugar. Stir in vanilla.
  2. Combine all dry ingredients, then add in whip cream and beaten eggs. Stir until combined, then pour into a greased 8" cake pan.
  3. Bake at 350°F for 30-45 min, or until it tests done.
