  • 1 cup whipping cream
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 ½ cups sweet rice flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs lightly beaten


  • Whip cream until still, while slowly adding sugar. Stir in vanilla.
  • Combine all dry ingredients, then add in whip cream and beaten eggs. Stir until combined, then pour into a greased 8" cake pan.
  • Bake at 350°F for 30-45 min, or until it tests done.
