Adobo sauce gives these chicken tacos a sweet and smoky flavor.
  • 2 cups coleslaw mix
  • 3-4 Tbsp GF mayonaise, to taste
  • Zest and juice from 1 lime
  • ½-1 tsp GF adobo sauce*, to taste
  • Salt and pepper
  • 2 cups shredded rotisserie chicken (or Crunchy Chicken Strips)
  • 8 GF corn tortillas
  • ¼-1/2 cup fresh cilantro leaves
  1. Combine first four ingredients, then season to taste with salt and pepper.
  2. Heat tortillas by broiling in oven on each side for about 1 minute.
  3. Top each tortilla with chicken, coleslaw mixture, and some fresh cilantro.
Suggestion: for adobo sauce, I buy the small can of chipotle peppers in adobo sauce, and purée it. Then I freeze it in a plastic bag (spread out thin), and just break off the amount when I need it.
