Smoky Chicken Tacos

Leftover coleslaw? Leftover cooked chicken? With just a few more ingredients you can make delicious Smoky Chicken Tacos is in less than 5 minutes!

Chicken and coleslaw in a wrap would normally taste like any other chicken wrap, but by adding 2 powerhouse flavours of lime and adobo sauce, it brings out that smoky Mexican-South of the Border taste.

Smoky Chicken Tacos

Adobo sauce gives these chicken tacos a sweet and smoky flavor.

Ingredients
  

  • 2 cups coleslaw mix
  • 3-4 Tbsp GF mayonaise to taste
  • Zest and juice from 1 lime
  • 1/2-1 tsp GF adobo sauce* to taste
  • Salt and pepper
  • 2 cups shredded rotisserie chicken or Crunchy Chicken Strips
  • 8 GF corn tortillas
  • 1/4-1/2 cup fresh cilantro leaves

Instructions
 

  • Combine first four ingredients, then season to taste with salt and pepper.
  • Heat tortillas by broiling in oven on each side for about 1 minute.
  • Top each tortilla with chicken, coleslaw mixture, and some fresh cilantro.

Notes

Suggestion: for adobo sauce, I buy the small can of chipotle peppers in adobo sauce, and purée it. Then I freeze it in a plastic bag (spread out thin), and just break off the amount when I need it.
