Grated carrot salad has to be one of the easiest dishes to prepare, as well as being kid-friendly and good for you too.
Shredded Carrot Salad
- 3-4 cups freshly grated carrots
- 1/2-1 cup raisins
- 1/4 to 1/3 cup GF mayonnaise or 2 Tbsp olive oil + 2 Tbsp orange juice
- Combine all ingredients in a medium sized bowl. Add the desired dressing choice from above and toss to coat. Chill for at least 1 hour then serve.
