What could be better than two buttery cookies dusted with sugar and sandwiched together with jam.
Shortbread & Jam Cookies
- 2 cups butter
- 1 cup icing sugar
- 2 cups potato flour
- 1 cup rice flour
- 1½ cup tapioca starch
- 2 tsp xanthan gum
- 1 cup jam
- Cream the butter and sugar together.
- In a separate bowl mix all the dry ingredients until fully combined. Then slowly add to the butter mixture.
- Place on a cookie sheet and bake at 325°F for 5-7 minutes. They will be just golden on the bottom.
- To assemble, sandwich cookies together by spreading jam (or melted chocolate), on one side.
