Flourless Peanut Butter Cookies

Because of the lack flours in this recipe, the cookie gets the majority of its structure from the egg – so this is not a good recipe to use an egg substitute with.
Flourless Peanut Butter Cookies
Ingredients
- 1 cup smooth peanut butter
- 6 Tbsp light brown sugar
- 6 Tbsp sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Cream together the peanut butter and sugars. Beat in the egg, then add the remaining ingredients.
- Roll into 2 Tbsp balls and place on a parchment lined baking sheet. Press down with a fork, and bake at 350°F for 10 minutes.
- Allow cookies to cool on pan for 2 minutes before moving to wire rack.
I love this recipe although I use crunchy PB. I have tried this with sugar substitute only to end up with a pile of crumbs. (Then they are made into pie crust!) It does work well with coconut palm sugar, though, thus satisfying my Gluten Free and hubby’s diabetic diet.

I have made a slight thumbprint, added a little jelly to the center prior to baking for pb&j cookies. Came out great.
