Because of the lack flours in this recipe, the cookie gets the majority of its structure from the egg – so this is not a good recipe to use an egg substitute with.

Flourless Peanut Butter Cookies

Ingredients
  

  • 1 cup smooth peanut butter
  • 6 Tbsp light brown sugar
  • 6 Tbsp sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Cream together the peanut butter and sugars. Beat in the egg, then add the remaining ingredients.
  • Roll into 2 Tbsp balls and place on a parchment lined baking sheet. Press down with a fork, and bake at 350°F for 10 minutes.
  • Allow cookies to cool on pan for 2 minutes before moving to wire rack.

  1. I love this recipe although I use crunchy PB. I have tried this with sugar substitute only to end up with a pile of crumbs. (Then they are made into pie crust!) It does work well with coconut palm sugar, though, thus satisfying my Gluten Free and hubby’s diabetic diet.

    great recipe! Easy to make and uses ingredients that are usually already in the home – these can be sealed in a bag and frozen with no loss of flavour or texture!

  3. I have made a slight thumbprint, added a little jelly to the center prior to baking for pb&j cookies. Came out great.
