  • 4 eggs
  • 1 tsp vanilla
  • 5 ounces GF bread broken into pieces
  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 20 ounce can crushed pineapple reserve 1/2 cup juice
  • 1 tsp baking soda


  • In a processor, mix all the ingredients together and blend.
  • Pour into a lightly greased 8x8 baking pan and sprinkle some cinnamon on top.
  • Bake at 350°F for 45 minutes and lightly brown.
