Pecan Meringue Cookies

Ingredients
  

  • 1 cup whole pecans toasted, chopped
  • 3 egg whites
  • Pinch salt
  • 1 cup sugar
  • 1 tsp vinegar

Instructions
 

  • Preheat oven to 300°F.
  • Beat egg whites and salt until soft peaks form. Then gradually add in sugar and vinegar until stiff peaks form. Then gently fold in the pecan pieces.
  • Drop by teaspoons onto a parchment lined baking sheet, and place in oven. Immediately turn off oven and leave them in the oven overnight.
