Pecan Meringue Cookies

Sweet, light clouds of pecan fluffiness.

- 1 cup whole pecans toasted, chopped
- 3 egg whites
- Pinch salt
- 1 cup sugar
- 1 tsp vinegar
Preheat oven to 300°F.
Beat egg whites and salt until soft peaks form. Then gradually add in sugar and vinegar until stiff peaks form. Then gently fold in the pecan pieces.
Drop by teaspoons onto a parchment lined baking sheet, and place in oven. Immediately turn off oven and leave them in the oven overnight.
