Orange Quinoa Salad
With orange, quinoa, arugula, goat cheese and fresh herbs, this is the type of salad where you need to have a piece of everything in every bite. That is the only way you can truly appreciate the unique flavor combinations in this Orange Quinoa Salad.
Cook quinoa according to package directions then lay out on a baking sheet to cool. Whisk together all dressing ingredients.
Toss salad greens with quinoa and dressing, then divide into 4-6 bowls. Top with remaining ingredients.

Sounds and looks incredible. What is the protein content of this as a side dish and as a main dish?
Many thanks.

I’m confused… the line reads…With orange, quinoa, dill, arugula and goat cheese, but the recipe calls for chives not dill. In the picture it looks more like dill than chives..

Sorry about that – I’ve fixed the recipe! I like dill, but my husband hates it so I made his with all chives. When I’m typing up all my recipes there are a number of distractions around me (both are boys under the age of 8!), so I occasionally don’t proof read close enough 🙂
