Chickpea & Quinoa Salad
Chickpeas, quinoa, and almonds combine together to give you a super-dooper, protein-packed salad. Marinating the chickpeas first is the key to the vibrant flavors in this hearty Chickpea & Quinoa Salad.

Chickpea & Quinoa Salad
Ingredients
- 15 oz chickpeas rinsed and drained
- ½ cup red quinoa cooked and cooled (or white quinoa)
- 2 green onions thinly sliced
- 1 cup cherry tomatoes
- 6 cups salad greens
Dressing
- Zest from 1 lemon
- 2 Tbsp lemon juice
- 3 Tbsp olive oil
- 1 Tbsp fresh Italian parsley
- ¼ tsp red pepper flakes
- Salt and pepper to taste
Instructions
- In a large bowl whisk dressing ingredients together, then add chickpeas and allow to marinate for at least 30 minutes.
- Cook quinoa according to package directions. Spread out on a baking sheet and allow to cool.
- Divide remaining ingredients up into 4-6 bowls, then drizzle with dressing (and chickpeas), tossing to coat.
my daughter who has celiac is allergic to chic peas, tomatoes and nuts. What do you suggest to subitute?
In place of chickpeas, tomatoes nuts you could add: beans (cannelli, pinto, or black beans), cucumber, sunflour seeds…really anything goes. Just think of this as a normal salad, and add in the stuff she likes.
