Crisp and chewy, and filled with soft raisins.
Ingredients
  • ⅔ cup rice flour
  • ⅔ cup tapioca flour
  • ⅔ cup corn starch
  • 1 Tbsp potato flour
  • ½ tsp xanthan gum
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup butter or margarine
  • ¾ cup brown sugar
  • ¼ cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 2½ cups GF oatmeal
  • 1 cup raisins
  • 1 cup chopped walnuts
Instructions
  1. In bowl mix first 9 dry ingredients. In separate bowl, beat butter and sugar until light and fluffy. Beat in honey, eggs (one at a time) and vanilla. Gradually mix in flour mixture.
  2. Stir in oats, raisins and nuts. Drop by tablespoons onto greased cookie sheets, and bake at 350°F for 10 minutes. Cool 3-5 minutes before moving to a wire rack.
