Oatmeal & Raisin Cookies

Crisp and chewy, and filled with soft raisins.

- 2/3 cup rice flour
- 2/3 cup tapioca flour
- 2/3 cup corn starch
- 1 Tbsp potato flour
- 1/2 tsp xanthan gum
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup butter or margarine
- 3/4 cup brown sugar
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla
- 2 1/2 cups GF oatmeal
- 1 cup raisins
- 1 cup chopped walnuts
In bowl mix first 9 dry ingredients. In separate bowl, beat butter and sugar until light and fluffy. Beat in honey, eggs (one at a time) and vanilla. Gradually mix in flour mixture.
Stir in oats, raisins and nuts. Drop by tablespoons onto greased cookie sheets, and bake at 350°F for 10 minutes. Cool 3-5 minutes before moving to a wire rack.
