Oatmeal & Raisin Cookies

Crisp and chewy, and filled with soft raisins.

Ingredients
  

  • 2/3 cup rice flour
  • 2/3 cup tapioca flour
  • 2/3 cup corn starch
  • 1 Tbsp potato flour
  • 1/2 tsp xanthan gum
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup butter or margarine
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups GF oatmeal
  • 1 cup raisins
  • 1 cup chopped walnuts

Instructions
 

  • In bowl mix first 9 dry ingredients. In separate bowl, beat butter and sugar until light and fluffy. Beat in honey, eggs (one at a time) and vanilla. Gradually mix in flour mixture.
  • Stir in oats, raisins and nuts. Drop by tablespoons onto greased cookie sheets, and bake at 350°F for 10 minutes. Cool 3-5 minutes before moving to a wire rack.
