A crisp and fresh side dish that’s simple to make yet simply divine when you eat it!
|Lemon & Parmesan Asparagus|| |
- 1 bunch of asparagus
- 2 Tbsp olive oil
- 2 Tbsp Parmesan cheese grated
- 1 tsp lemon zest
- Salt and freshly ground black pepper
- Trim ends of asparagus, and place in a medium sized saucepan of boiling water. Reduce heat slightly to a simmer,and parboil the asparagus for exactly 2 minutes and then drain the hot water.
- While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste.
