Why have plain green beans when you can add a ton more flavor in just seconds. Mix in some yellow beans for added color, and be sure to use fresh tarragon - it makes all the difference!
Steam beans until tender-crisp, about 7-10 minutes.
When garlic is used raw, it's best to finely chop it with a knife rather than use a garlic press. A garlic press crushes the entire clove breaking all its cells open, releasing all of the garlic's pungent compounds. Using a knife damages less cells, therefor the dressing will have a much milder garlic flavor.
Whisk dressing ingredients together until emulsified, then toss with warm beans and serve.
