Tarragon Green Beans

Why have plain green beans when you can add a ton more flavor in just seconds. Mix in some yellow beans for added color, and be sure to use fresh tarragon – it makes all the difference!

When garlic is used raw, it’s best to finely chop it with a knife rather than use a garlic press. A garlic press crushes the entire clove breaking all its cells open, releasing all of the garlic’s pungent compounds. Using a knife damages less cells, therefor the dressing will have a much milder garlic flavor.

Whisk dressing ingredients together until emulsified, then toss with warm beans and serve.DijonTarragonGreenBeans3

  • ½ lb green beans
  • 1 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1 tsp GF Dijon
  • 1 garlic clove, finely chopped*
  • 1 Tbsp fresh tarragon, finely chopped
  • Salt to taste
  1. Steam beans until tender crisp.
  2. Whisk all dressing ingredients together and toss with hot (or room temp) green beans.
