Why have plain green beans when you can add a ton more flavor in just seconds. Mix in some yellow beans for added color, and be sure to use fresh tarragon – it makes all the difference!
Steam beans until tender-crisp, about 7-10 minutes.
When garlic is used raw, it’s best to finely chop it with a knife rather than use a garlic press. A garlic press crushes the entire clove breaking all its cells open, releasing all of the garlic’s pungent compounds. Using a knife damages less cells, therefor the dressing will have a much milder garlic flavor.
Whisk dressing ingredients together until emulsified, then toss with warm beans and serve.

- ½ lb green beans
- 1 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1 tsp GF Dijon
- 1 garlic clove, finely chopped*
- 1 Tbsp fresh tarragon, finely chopped
- Salt to taste
- Steam beans until tender crisp.
- Whisk all dressing ingredients together and toss with hot (or room temp) green beans.
