Heart-Shaped Roasted Root Vegetable Medley

It doesn’t have to be Valentine’s Day to put a piece of your heart on their plate!

Heart-Shaped Roasted Root Vegetable Medley
Ingredients
- Potatoes
- Sweet Potatoes
- Parnsips large
- Carrots large
- Olive oil
- Rosemary
- Salt and pepper
Instructions
- Wash vegetables (no need to peel), and slice lengthwise 1/4" thick.
- Using a small metal cookie cutter, cut out veggies and place on a baking sheet.
- Drizzle with some oil, sprinkle on seasonings then toss to coat.
- Bake at 400°F for 20-30 minutes or until soft.
