Chocolate desserts shouldn’t get all the fun of showing someone you love them.

If sugary and sweet is too sappy for you (and requires a bit too much effort in the kitchen), all you need is a small heart shaped cookie cutter, and some root vegetables to turn a plain side dish into a declaration of love.  It doesn’t have to be Valentine’s Day to put a piece of your heart on their plate!

Heart-Shaped Roasted Root Vegetable Medley

Ingredients
  • Potatoes
  • Sweet Potatoes
  • Parnsips (large)
  • Carrots (large)
  • Olive oil
  • Rosemary
  • Salt and pepper
Instructions
  1. Wash vegetables (no need to peel), and slice lengthwise ¼" thick.
  2. Using a small metal cookie cutter, cut out veggies and place on a baking sheet.
  3. Drizzle with some oil, sprinkle on seasonings then toss to coat.
  4. Bake at 400°F for 20-30 minutes or until soft.
