Smoky Lentil Patties With Cherry Tomato & Caper Salad
Crispy patties filled with nutrients and flavor are served with a light and tasty lemon sauce. Capers add a great texture to this simple salad, and their saltiness are balanced by the balsamic reduction.
Shape mixture into patties, whatever size you like, then fry both sides until crispy and golden.
Toss together the tomatoes, oil and capers. Sprinkle with salt and pepper and divide into 2 servings.
Boil the balsamic vinegar until it is reduced to a thick syrup. Then drizzle it warm over your plated salads.

Smoky Lentil Patties With Cherry Tomato & Caper Salad
Ingredients
Patties
- 2 cups cooked or canned lentils
- 1/2 cup GF fresh bread crumbs
- 1 egg
- 2 green onions thinly sliced
- 1 clove garlic minced
- 1 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 Tbsp olive oil
Sauce
- 1 cup Greek plain yogurt or sour cream
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
Salad
- 1/4 cup GF balsamic vinegar
- 1 cup cherry tomatoes halved
- 1 Tbsp olive oil
- 2 Tbsp capers
- 1/4 tsp pepper
Instructions
- For the patties, mash about half (or all if desired) of the lentils then add remaining ingredients stirring until combined. Shape into patties (size of your choice).
- Heat oil in fry pan and cook patties in batches flipping once, until both sides are crisp and golden, about 5 minutes per side.
- For the sauce, combine all ingredients together in a bowl. Serve with patties.
- For salad, heat vinegar in small saucepan to boiling. Continue to boil until reduced to a thick syrup. Combine remaining ingredients together, then drizzle with balsamic reduction.
