Black Bean Soup
Bacon and chipotle add a rich smoky flavor and bit of heat to this great tasting soup.
Fry bacon until crisp, set aside. In a large stock pot, fry onions and carrot in oil until soft. Add garlic and spices, frying for another 30 seconds.
Add tomatoes, corn, beans, broth and 2/3 of the cooked bacon (save rest for garnish). Bring to a boil then reduce heat and simmer for 30 minutes. Use an immersion blender, or run soup through a food processor until smooth. Return to pot and continue to simmer until soup is reduced and has reached your desired consistency.

one thing that I have to mention is about some ingredients names, I have never come across the names :
chipotle and cilantro, what are these in plane English ?
Some short cuts eg GF bacon, what is this bacon ?
I am looking very forward to trying this black bean soup. Thank you
So glad you liked it!
Great questions! GF is short for gluten free. Using the abbreviation helps to keep the recipe text a bit more simple, and not so wordy.
Chipotle is a type of Mexican pepper that is sold in cans with a spicy adobe sauce. It has a deep smoky, spicy flavor. If you don’t have any, you could always replace it with some chili powder.
Cilantro is a fresh herb which is used a lot in Mexican or Southwest style cooking. If you don’t like the taste of it, you can always replace it with parsley.
chipotle is basically a jalapeno pepper that is dried, sometimes smoked, I crush it up before adding it to anything – nice warming taste, if you find it too hot, eat a piece of bread or cheese to take the heat off:)
cilantro is herb that is used in a lot of Mexican recipes, personally, it tastes ‘soapy’ so I just leave it out or substitute chopped parsley
GF bacon – this is a recent addition to the grocery shelves, in Canada, here it is a sort of dried substitute for real bacon, and, it is also found in the kosher section/shops – pretend bacon – my preference is to use the real thing.
