Spicy Shrimp Noodle Salad with Ginger-Lime Dressing

Loaded with a ton of fresh veggies, thin rice vermicelli noodles, and juicy shrimp, this is no girl-size salad! But the best part is the dressing that brings all those flavors together.

Prepare all veggies, and whisk together all dressing ingredients (except almonds) until smooth. Toast almonds in a dry skillet, shaking pan often, until fragrant and golden.SpicyShrimpSaladCabbageNoodle2

Cook shrimp with oil, garlic and pepper flakes. Once cooked, set aside.Cook noodles in salted water according to package directions. Drain and set aside.SpicyShrimpSaladCabbageNoodle3

Loaded with a ton of fresh veggies, thin rice vermicelli noodles, and juicy shrimp, all tossed with a light and fresh ginger & lime dressing.
Ingredients
  • 1lb large shrimp (about 20)
  • 1 Tbsp oil
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 4 oz rice vermicelli noodles
  • 4 cups shredded napa cabbage
  • 2 carrots, shredded
  • ½ cup radishes, thinly sliced
  • ½ cup cucumber, thinly sliced
  • ½ cup red pepper, thinly sliced
  • ¼ cup fresh cilantro, chopped
Dressing
  • 3 Tbsp oil
  • 2 Tbsp lime juice
  • 2 Tbsp rice vinegar
  • 2 tsp fresh ginger, minced
  • 2 tsp honey or agave
  • 2 tsp GF soy sauce
  • ½ tsp salt
  • ¼ tsp Sriacha or other GF hot sauce
  • ¼ cup sliced almonds, toasted (optional)
Instructions
  1. Cook shrimp with oil, garlic and pepper flakes. Once cooked, set aside.
  2. Cook noodles in salted water according to package directions. Drain and set aside.
  3. Combine remaining salad ingredients in a large bowl. Set aside.
  4. Whisk together all dressing ingredients (except almonds) until smooth. Toast almonds in a dry skillet, shaking pan often, until fragrant and golden.
  5. Divide noodles into 4-6 bowls, along with veggies from bowl. Drizzle over dressing, tossing to coat, then garnish with almonds.

    is the thin rice vermicelli noodle something you could use on a diabetic diet? there are no
    items listed for carbs etc.
