Shaved Cucumber Salad

Refreshing crispy salad.

Ingredients
  

  • 3 English cucumbers
  • 1 stalk celery with leaves thinly sliced at wide angle
  • 1 shallots
  • 1/4 cup GF mayonnaise
  • 1/4 cup fresh cilantro
  • 3 Tbsp vinegar
  • Salt and pepper

Instructions
 

  • Prepare cucumbers by using a vegetable peeler and shaving the cucumber into long ribbons. Stop when you get to the seeds, then turn cucumber and slice the other sides. Reserve 1 center, and discard the rest. Place cucumber slices in a large bowl with the celery.
  • In a blender combine the remaining ingredients (along with the 1 cucumber center), and purée until smooth. Season with salt and pepper than pour over the the cucumber and celery and toss gently.
