
Light and airy mousse flavored with a hint of pumpkin and spices, topped with sweet crunchy cookies.
Whisk together pumpkin, yogurt, all but 1 Tbsp sugar and spices. In another bowl beat cream, slowly adding remaining 1 Tbsp of sugar, until stiff peaks then stir in vanilla.
Fold whipped cream gently into pumpkin mixture, until no streaks remain (reserve some whip cream for topping).
Crumble 8 of the cookies into small-medium sized chunks. To serve, spoon mousse into 8 cups then top with a dollop of whipped cream, some crushed cookies and one whole cookie.

- 1 cup pumpkin puree
- 1 cup plain GF yogurt (or vanilla flavoured if you want more sweetness)
- ½ cup sugar, divided (or substitute to taste)
- 1 tsp cinnamon
- ½ tsp ground ginger
- ⅛ tsp cloves
- ⅛ tsp nutmeg
- ⅛ tsp allspice
- ½ tsp vanilla
- 1⅓ cups whipping cream
- 16 amaretti cookies
