Onion Poppy Seed Dressing

A super tasty dairy free dressing that is perfect on a spinach salad. Freezing the onion first mellows the flavors, as well it helps the onion to completely liquefy in the dressing.

Ingredients
  

  • 1/2 white onion frozen & thawed
  • 1/2 cup sugar or less to taste (or about 1/2 tsp stevia)
  • 6 Tbsp white vinegar
  • 1/2 tsp celery seed
  • 1/2 tsp mustard powder
  • 1/2 tsp salt
  • 1 cup oil of your choice
  • 1 tsp poppy seeds

Instructions
 

  • Chop thawed onion and place in blender.
  • Add remaining ingredients (add a bit of sugar at a time, then taste), except oil and poppy seeds, and process until smooth.
  • With the machine running, slowly add the oil. The slower the better (this will prevent the dressing from separating when it sits in your fridge).
  • Pour into a sealable jar and stir in the poppy seeds. Store in fridge, and use within 4 days.

  1. Looks good except for canola oil. Originally rapeseed. Might want to look it up.

  2. You are free to substitute the canola oil for any other oil you like. I wasn’t aware of canola oil/rapeseeds past, so I did look it up. After my research I am still confident that the canola oil currently being produced is safe, for me, to be consumed. Its a personal choice for everyone, so thanks for bringing it to our attention.

  4. What does the poppy seed do for it, a waste of time and money.
    Poppy seed must be ground to have a taste to it.

  5. The poppy seeds add color, texture, and I can taste them when I bite into them – a slight bitter taste to help offset the sweetness of the dressing. By all means you can omit them, it will taste just as great.

  6. The thawed onion reduces its shelf life. You can easily half the recipe to make a smaller amount. I had originally created the recipe for a large event I was hosting 🙂 Have a great day!
