Jamaican Jerk Prawns with Pineapple Salsa
Caribbean flavors infuse this entire dish. Sweet pineapple and spicy peppers top these prawns perfectly.

Jamaican Jerk Prawns with Pineapple Salsa
Ingredients
Jerk:
- 4 scallions thinly sliced
- 2 Tbsp fresh ginger minced
- 3 garlic minced
- 2 tsp olive oil
- 1/2 tsp allspice
- 1/2 tsp pepper
- 1/4 tsp cinnamon
- 1/8 tsp cayenne
- 1/2 tsp salt
- 1 tsp brown sugar
- 24 large prawns
Salsa:
- 20 oz can pineapple tidbits drained (or 1 cup fresh)
- 1 red pepper diced
- 2 Tbsp fresh lime juice
- 1 scallion finely diced
- 1 tsp fresh ginger
- 2 tsp brown sugar
- 1/4 tsp salt
1 1/2 cups rice
Instructions
- Prepare Jerk seasonings: combine all ingredients, then toss in prawns to coat. Sauté in a bit of oil until fully cooked. Set aside.
- Salsa: combine all ingredients and set aside (make ahead if possible to allow flavors to intensify).
- Cook rice according to package directions.
- To serve, put prawns over a bed of rice, then top with salsa.
