Jamaican Jerk Prawns with Pineapple Salsa

Caribbean flavors infuse this entire dish. Sweet pineapple and spicy peppers top these prawns perfectly.

Jamaican Jerk Prawns with Pineapple Salsa

Ingredients
Jerk:
  • 4 scallions, thinly sliced
  • 2 Tbsp fresh ginger, minced
  • 3 garlic, minced
  • 2 tsp olive oil
  • ½ tsp allspice
  • ½ tsp pepper
  • ¼ tsp cinnamon
  • ⅛ tsp cayenne
  • ½ tsp salt
  • 1 tsp brown sugar
  • 24 large prawns
Salsa:
  • 20 oz can pineapple tidbits, drained (or 1 cup fresh)
  • 1 red pepper, diced
  • 2 Tbsp fresh lime juice
  • 1 scallion, finely diced
  • 1 tsp fresh ginger
  • 2 tsp brown sugar
  • ¼ tsp salt
1½ cups rice
    Instructions
    1. Prepare Jerk seasonings: combine all ingredients, then toss in prawns to coat. Sauté in a bit of oil until fully cooked. Set aside.
    2. Salsa: combine all ingredients and set aside (make ahead if possible to allow flavors to intensify).
    3. Cook rice according to package directions.
    4. To serve, put prawns over a bed of rice, then top with salsa.
