Jamaican Jerk Prawns with Pineapple Salsa

Ingredients
  

Jerk:

  • 4 scallions thinly sliced
  • 2 Tbsp fresh ginger minced
  • 3 garlic minced
  • 2 tsp olive oil
  • 1/2 tsp allspice
  • 1/2 tsp pepper
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne
  • 1/2 tsp salt
  • 1 tsp brown sugar
  • 24 large prawns

Salsa:

  • 20 oz can pineapple tidbits drained (or 1 cup fresh)
  • 1 red pepper diced
  • 2 Tbsp fresh lime juice
  • 1 scallion finely diced
  • 1 tsp fresh ginger
  • 2 tsp brown sugar
  • 1/4 tsp salt

1 1/2 cups rice

    Instructions
     

    • Prepare Jerk seasonings: combine all ingredients, then toss in prawns to coat. Sauté in a bit of oil until fully cooked. Set aside.
    • Salsa: combine all ingredients and set aside (make ahead if possible to allow flavors to intensify).
    • Cook rice according to package directions.
    • To serve, put prawns over a bed of rice, then top with salsa.
