This blend produces light and fluffy cakes and pastries.
Ingredients
  • 1 cup sweet white sorghum flour
  • 1 cup white rice flour
  • ¾ cup cornstarch
  • 1 ½ tsp xanthan gum
  • ½ tsp salt
Instructions
  1. Mix all ingredients well and store in the freezer in an air tight container.
Notes
Remember to omit salt in the recipes you make, as the flour mix already contains it.

  2. If you look under the Recipes, Breads & More tab, you will find several gluten free bread recipes. Gluten free flours all have such a different taste and texture, it all comes down to personal choice. So its best to try out a few different recipes, to find out which one is your favorite.

  3. In the recipe for cake & pastry flour, I will need to replace the corn starch with another type of flour. Can you recommend a flour or another kind of starch to substitute for the corn startch.

  4. I read on another site that you can substi equal amounts of ground flaxseed or ground chia seeds for the xanthan & guar gum because some people cant tolerate xanthan or guar gum. The reason I am asking is I am new to all this and it is a bit overwhelming. I’m learning all over again how to cook and what to eat so I want to get it right. Thank you for your site it is helping a lot.

  5. Great timing! I am working on an article about substitute’s for gums right now – I’ll let you know when it’s ready! In the meantime…
    Here is a substitute you can try:
    15 grams ground flaxseed meal
    15 grams ground chia seeds
    60 grams boiling-hot water
    Mix the flaxseed and chia seeds together, the pour in water. Whisk until the seeds have formed a thick mixture. Allow to cool completely before adding to recipe.
