Ingredients
- 1 cup brown rice or sorghum flour
- 1/2 cup teff flour
- 1/2 cup millet flour
- 2/3 cup tapioca starch/flour
- 1/3 cup cornstarch or potato starch
Instructions
- Combine all ingredients and mix well.
- Store in an airtight container at room temperature until ready to use.
I hope I am not bothering you but what is Millet and Millet Flour? I am fairly new to the Celiac sceen and just worried because I am sensitive but not allergic to tree nuts and must be careful with egg whites and have type 1 Diabetes and Cystic Fibrosis and Osteoarthritis from the CF.
Millet is a gluten free whole grain that can be ground up into flour. It has a mild flavor, that is slightly nutty and sweet. It has a great texture – similar to regular wheat flour, and is best when used (as part of a flour blend) in cakes, cookies, muffins, or pancakes, and especially in bread recipes. It should be kept in the fridge/freezer due to its high protein content.
