Adding additional nuts on the top of the loaf before you bake it, creates a great crunchy top.
Ingredients
  • 1 cup rice flour
  • ½ cup soy flour
  • 3 tsp baking powder
  • 1 cup potato starch
  • 3 large eggs
  • ½ cup sugar
  • ½ cup corn oil
  • ½ tsp salt
  • 3 large bananas, mashed
  • ½ cup nuts, chopped
Instructions
  1. In medium bowl mix rice flour, soy flour, potato starch and baking powder and whisk lightly until well combined.
  2. In a separate bowl blend eggs, sugar, oil, and salt with a mixer set on medium. Add bananas and mix until combined. Slowly mix in the dry ingredients. Stir in the nuts using a wooden spoon.
  3. Pour batter into greased loaf pan, and sprinkle on some extra nuts if you like. Bake at 350°F for one hour, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
