Add gluten free salami to make these taste Italian.
Ingredients
- 2 eggs beaten
- 1 cup rice flour
- 1/2 cup cornstarch
- 1/2 cup bean flour
- 1 Tbsp baking powder
- 2 tsp sugar
- 1 1/2 tsp xanthan gum
- 1 tsp baking soda
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/2 cup GF pizza sauce
- 1/3 cup mozzarella cheese shredded
- 1/4 cup mushrooms chopped
- 1/4 cup green pepper chopped
- 1/4 cup onions chopped
Instructions
- Thoroughly mix eggs, rice flour, bean flour, cornstarch, xanthan gum, baking powder, baking soda, salt, sugar, garlic powder and oregano.
- Blend the remaining ingredients in well.
- Grease muffin tins and fill with batter 2/3 full. Bake at 350°F for 45 minutes or until lightly browned.
- Note: A variety of your favorite vegetables or meat can be used.
