Cheese filled cornbread wedges, go great with chili or stew, or alongside a big salad. Or try them for breakfast with some jam.

Ingredients
DRY INGREDIENTS
  • ½ cup corn flour
  • ¼ cup potato starch
  • ¼ cup white rice flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp xanthan gum
  • 1 cup sharp cheddar cheese, grated
WET INGREDIENTS
  • 1 egg
  • ½ cup water
  • 2 Tbsp oil
Instructions
  1. Thoroughly mix the first seven dry ingredients together in a bowl.
  2. Combine the remaining wet ingredients in a separate bowl and then blend together well.
  3. Place batter into a 9 inch, square, greased baking pan, and bake at 400°F for 20-25 minutes or until lightly browned.
