Vanilla Sugar
Fresh vanilla beans, or ones that have been spent making homemade vanilla extract can be used to make vanilla-flavored sugar. Use the vanilla sugar in place of granulated or powdered sugar when you want to intensify the vanilla flavor, such as in hot chocolate, crepes, whipping cream, or desserts.
If using beans after making vanilla extract, place them on a rack and allow to dry completely. If using fresh beans, spit the beans lengthwise using a sharp knife (keep the seeds inside the beans).
Place the beans in a container full of granulated sugar and cover completely with the sugar (seal container). Tossing every few days to allow the flavor to permeate throughout all the sugar.
You can even use powdered sugar! Allow at least 2 weeks before using the sugar for maximum vanilla flavor.

Ingredients
- 2 cups granulated or powdered sugar
- 4-8 vanilla beans split
Instructions
- Place dried split beans into a container with the sugar. Cover and shake every few days to distribute the vanilla beans.
- Allow 2 weeks for the beans to fully permeate the sugar before using. No need to discard the seeds, just keep them in there indefinitely.
