Cauliflower Mash

If you’d like a change from potatoes, or are following a low carb diet, this flavorful mashed cauliflower dish is perfect for you.

Cooking cauliflower only in butter and cream (instead of steaming in water), and keeping it uncovered while cooking, keeps excess moisture out. This makes the dish thick and full of flavor, not runny (because of water).

Using a food processor or immersion blender, pulse cooked cauliflower until broken down. Add flavorings, then puree until smooth and creamy.

Ingredients
  • 1 head cauliflower, cut into florets
  • 2 Tbsp heavy cream
  • 1 Tbsp butter
Flavorings
  • 1 Tbsp cream cheese
  • 3 Tbsp sour cream
  • 1-2 Tbsp creamed horseradish sauce, to taste
  • ¼ cup Parmesan or cheddar cheese, grated
  • 1 Tbsp butter
  • Salt and pepper to taste
Instructions
  1. Place the cauliflower, cream and butter into a large microwavable-safe bowl.
  2. Cook on high for 6 minutes uncovered. Remove, stir to coat, then cook for another 6 minutes until fork tender.
  3. Using an immersion blender or food processor, puree cauliflower. Add flavorings (adjusting to taste), pulsing until smooth and well combined.
