Sugar Free Cashew Cream Frosting
This frosting is perfect for those who are trying to limit their sugar intake. It’s creamy, smooth, with a touch of sweetness from stevia.
In a large bowl add cashews and dates along with enough water to cover them. Allow to sit for one hour.
Drain off water and add cashews and dates into a blender, along with lemon juice, sweetener, and half of the coconut milk. Process on high, stopping to scrape sides down. Add more coconut milk until mixture is smooth and creamy (like the consistency of mayonnaise).
Pour into a container and refrigerate for an hour to firm up into a spreadable consistency. Use as desired on cakes or cupcakes, or as a dip for fruit slices.
