Delicious creamy brown rice pudding loaded with raisins and a rich almond flavour.
Ingredients
  • ¾ cup uncooked brown rice
  • 1½ cups water
  • 2 cups almond milk, divided
  • 1 Tbsp agave
  • ¼ tsp salt
  • 1 egg, beaten
  • ⅔ cup golden raisins
  • 1 Tbsp butter or margarine
  • ½ tsp vanilla or almond extract
Instructions
  1. In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer as per the package directions.
  2. Transfer the cooked rice into another saucepan and add 1½ cups almond milk, agave and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes.
  3. Stir in remaining ½ cup almond milk, the beaten egg and raisins. Cook 2 minutes more, stirring constantly.
  4. Remove from heat, and stir in butter and vanilla. Serve warm.
  5. Sprinkle with cinnamon to taste.
