Honey-Chipotle Pork Chops

With a touch of honey for sweetness, this spicy chipotle sauce is perfectly balanced. For best results, make this dish in a cast iron skillet.

HoneyChipoltlePorkChop1Season chops with salt and pepper, and cumin, rubbing into meat. In a cast iron skillet heat 2 Tbsp butter, then fry chops on each side until done (160°F), set aside on a plate.

Ingredients
  • 4 pork chops
  • Salt and pepper
  • 2 tsp cumin
  • 6 Tbsp butter or margarine, cold (divided)
  • 1 cup GF chicken stock
  • 2-4 canned chipotle peppers (in GF adobo sauce), finely chopped
  • 2 Tbsp honey
  • 2 tsp GF balsamic vinegar
  • 3 Tbsp fresh cilantro, garnish
Instructions
  1. Season chops with salt and pepper, and cumin, rubbing into meat.
