Homemade Crispy Chow Mein Noodles

Light, crispy, fried noodles. Perfect for topping over a salad.

Ingredients
  

  • 3 eggs beaten
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1/2 cup cornstarch
  • 2 tbsp water
  • 1 tbsp vinegar
  • 1 1/2 tbsp xanthan gum
  • 1 1/2 tbsp oil
  • 1 1/2 tsp baking powder
  • 1 tsp salt

Instructions
 

  • Thoroughly mix all dry ingredients, then add in eggs, water, vinegar and oil.
  • Knead for several minutes, then roll out as thin as possible and cut into 2 inch strips.
  • Keep frying with hot oil until lightly browned. Place on a paper towel to let it drain and soak.
  • After this has cooled completely, keep it in the freezer until ready to use.
