Light, crispy, fried noodles. Perfect in your Asian cooking, or as a topping over salads.
Homemade Crispy Chow Mein Noodles
- 3 eggs beaten
- 1/2 cup potato starch
- 1/2 cup tapioca flour
- 1/2 cup cornstarch
- 2 tbsp water
- 1 tbsp vinegar
- 1 1/2 tbsp xanthan gum
- 1 1/2 tbsp oil
- 1 1/2 tsp baking powder
- 1 tsp salt
- Thoroughly mix all dry ingredients, then add in eggs, water, vinegar and oil.
- Knead for several minutes, then roll out as thin as possible and cut into 2 inch strips.
- Keep frying with hot oil until lightly browned. Place on a paper towel to let it drain and soak.
- After this has cooled completely, keep it in the freezer until ready to use.
