Roasted nuts with a spicy cinnamon coating.

- 3 cups mixed nuts
- ½ cup sugar
- 1 egg white
- 2 tsp cinnamon
- ½ tsp allspice
- ½ tsp ginger
- ½ tsp nutmeg
- ½ tsp salt
- Beat egg white until smooth and frothy. Add nuts and stir well.
- Stir ½ cup of sugar and all the spices in with the nuts and toss until they are well covered.
- Roast the nuts on a greased cookie sheet at 300°F for about 20 minutes (make sure to stir 2 to 3 times during baking).
- Once cooled, store in an airtight container.
