You will get your daily servings of vegetables in this flavor packed soup.
Ingredients
  • 2 tsp oil
  • 1-2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tsp coriander (cilantro)
  • ½ tsp cumin
  • ¼ tsp curry
  • ¼ tsp pepper
  • 4 cups carrots, chopped
  • 2 Tbsp ginger, minced
  • 3 cups GF chicken stock
  • 2 cups milk or cream (or milk alternative thickened with 1 Tbsp starch of your choice)
  • Salt to taste
Instructions
  1. In a stock pot, sauté garlic and onions with oil for 1 minute. Add spices and continue cooking until onions are soft. Add carrots, ginger and stock and simmer until carrots are tender.
  2. Remove from heat and purée using an immersion blender, food processor or blender. Return to pot and add milk, then season to taste with salt.
  3. Serve with a dollop of sour cream if you like.
