Garden Tomato Soup

Ingredients
  

  • 2 Tbsp butter or margarine
  • 1 onion chopped
  • 1 clove garlic minced
  • 1 carrot peeled and chopped
  • 2 stalks celery chopped
  • 1 red pepper chopped (or roasted red pepper)
  • 2 Tbsp tomato paste
  • 1 Tbsp lime juice
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 1-2 Tbsp paprika to taste
  • 3 cups GF chicken or GF vegetable broth
  • 1 can 796ml diced tomatoes

Instructions
 

  • In a large saucepan, sauté onion and garlic in butter until soft. Add carrots, celery, pepper, tomato paste, lime juice, sugar, salt, paprika, and cayenne. Cook for another 5 minutes.
  • Add broth and tomatoes, and simmer mixture for 20 minutes, until veggies are softened.
  • In a blender or food processor (in 2 batches), pureé until smooth, then return to pot to simmer until ready to eat.
