Garden Tomato Soup
Thick, rich, and full of sweet tomato taste.
Ingredients
- 2 Tbsp butter or margarine
- 1 onion chopped
- 1 clove garlic minced
- 1 carrot peeled and chopped
- 2 stalks celery chopped
- 1 red pepper chopped (or roasted red pepper)
- 2 Tbsp tomato paste
- 1 Tbsp lime juice
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/8 tsp cayenne pepper
- 1-2 Tbsp paprika to taste
- 3 cups GF chicken or GF vegetable broth
- 1 can 796ml diced tomatoes
Instructions
- In a large saucepan, sauté onion and garlic in butter until soft. Add carrots, celery, pepper, tomato paste, lime juice, sugar, salt, paprika, and cayenne. Cook for another 5 minutes.
- Add broth and tomatoes, and simmer mixture for 20 minutes, until veggies are softened.
- In a blender or food processor (in 2 batches), pureé until smooth, then return to pot to simmer until ready to eat.
