Thick, rich, and full of sweet tomato taste.
  • 2 Tbsp butter or margarine
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 carrot, peeled and chopped
  • 2 stalks celery, chopped
  • 1 red pepper, chopped (or roasted red pepper)
  • 2 Tbsp tomato paste
  • 1 Tbsp lime juice
  • ½ tsp sugar
  • ½ tsp salt
  • ⅛ tsp cayenne pepper
  • 1-2 Tbsp paprika, to taste
  • 3 cups GF chicken or GF vegetable broth
  • 1 can (796ml) diced tomatoes
  1. In a large saucepan, sauté onion and garlic in butter until soft. Add carrots, celery, pepper, tomato paste, lime juice, sugar, salt, paprika, and cayenne. Cook for another 5 minutes.
  2. Add broth and tomatoes, and simmer mixture for 20 minutes, until veggies are softened.
  3. In a blender or food processor (in 2 batches), pureé until smooth, then return to pot to simmer until ready to eat.
