butter or margarine

4oz GF butterscotch pudding & pie filling (not instant)
1/2
cup
brown sugar

egg
1 1/2
cup
GF Flour Blend

tsp
baking soda

cinnamon
Instructions
Cream butter with dry pudding mix and brown sugar, then add egg. Mix well then add remaining ingredients.
Use a small melon-baller scoop to form cookies, and place on an un-greased cookie sheet. Then flatten each with fingertips.
Bake at 350°F for 10 minutes.
Notes
If desired, insert 1 chocolate chip or GF butterscotch chip into the top of each cookie.
