Tropical Banana Cake

Ingredients
  

Wet Ingredients

  • 4 eggs
  • 3/4 cup oil
  • 3/4 cup mashed bananas
  • 3/4 cup crushed pineapple including juice

Dry Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups rice flour
  • 1/2 cup shredded coconut
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch
  • 1/4 cup cornstarch
  • 1/4 cup arrowroot powder
  • 2 1/2 tsp xanthan gum
  • 2 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt

Instructions
 

  • Thoroughly mix flours, xanthan gum, baking powder, baking soda, cinnamon and salt.
  • In another bowl, beat eggs and sugar until thick and fluffy. Add oil and mix.
  • Add dry ingredients and mix well. Then, add bananas, pineapple, and coconut. Mix thoroughly.
  • Pour into lightly greased 9x13 pan. Bake at 350°F for 40-45 minutes.
