Tropical Banana Cake

Wet Ingredients
- 4 eggs
- 3/4 cup oil
- 3/4 cup mashed bananas
- 3/4 cup crushed pineapple including juice
Dry Ingredients
- 1 1/2 cups sugar
- 1 1/2 cups rice flour
- 1/2 cup shredded coconut
- 1/2 cup tapioca flour
- 1/2 cup potato starch
- 1/4 cup cornstarch
- 1/4 cup arrowroot powder
- 2 1/2 tsp xanthan gum
- 2 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
Thoroughly mix flours, xanthan gum, baking powder, baking soda, cinnamon and salt.
In another bowl, beat eggs and sugar until thick and fluffy. Add oil and mix.
Add dry ingredients and mix well. Then, add bananas, pineapple, and coconut. Mix thoroughly.
Pour into lightly greased 9x13 pan. Bake at 350°F for 40-45 minutes.
