Tropical Banana Cake
The taste of bananas, coconut and pineapple in every mouthful.
Ingredients
Wet Ingredients
- 4 eggs
- 3/4 cup oil
- 3/4 cup mashed bananas
- 3/4 cup crushed pineapple including juice
Dry Ingredients
- 1 1/2 cups sugar
- 1 1/2 cups rice flour
- 1/2 cup shredded coconut
- 1/2 cup tapioca flour
- 1/2 cup potato starch
- 1/4 cup cornstarch
- 1/4 cup arrowroot powder
- 2 1/2 tsp xanthan gum
- 2 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
Instructions
- Thoroughly mix flours, xanthan gum, baking powder, baking soda, cinnamon and salt.
- In another bowl, beat eggs and sugar until thick and fluffy. Add oil and mix.
- Add dry ingredients and mix well. Then, add bananas, pineapple, and coconut. Mix thoroughly.
- Pour into lightly greased 9x13 pan. Bake at 350°F for 40-45 minutes.
