In a large bowl, beat eggs and sugar together for 5 minutes. Add vanilla, margarine, and applesauce; beat well.
Slowly beat in dry ingredients in order given, beating well after each
addition. Mix raisins with part of potato starch before stirring into
batter.
Pour into 2 greased/paper lined muffin tins and bake at 375°F for 20-25 minutes.
Notes
Carrot Muffins: Substitute 2 cups cooked and mashed carrots for the applesauce. Increase brown sugar to 2 cups.
Pumpkin Muffins: Substitute 398 ml canned pumpkin for the
applesauce. Increase brown sugar to 2 cups.
